Spicy Thai Lemongrass Salad

This is a very spicy, yummy, low fat, sweet treat. Easy to make and fun to eat! Noah and I just learned how to make it in Thailand :)

Ingredients:
  • 2 tsp Soy Sauce
  • 2 tsp lime juice
  • 1 tsp brown sugar
  • 1 medium hot pepper (thai red chili if you can find it)
  • 1 hand full of minced almonds
  • 1 hand full toasted coconut
  • 1/2 Shallot minced
  • 2 stocks lemongrass
  • 2 Green onions
  • cabbage or mild green leaf

Instructions:

This is really easy, basically, you only need a cutting board and a bowl to put all of the ingreidents in. 

Combine soy sauce, lime juice, sugar, and chilli

Cut the lemongrass as finely as possible, starting at the bottom and going only 3/4 of the way up.

Do the same with the green onions, but only the green part (or top)

Combine all of the ingredients with the dressing in the bowl

serve with small cabbage wraps or other small green leaf.  Wrap the salad in the cabbage and enjoy!
