Preheat oven to 350 degrees and coat an 8x8 baking dish with cooking spray.
Combine bread crumbs, parmesan, italian seasoning and garlic powder together in a bowl; set aside. Remove skin from eggplant, and slice into 1/2 inch thick slices.
Dip eggplant in egg whites, then dredge in the bread crumb mixture. Bake eggplant on cookie sheet until lightly browned, about 20 min.
Place a layer of browned eggplant on bottom of 8x8 baking dish, then add 1/3c tomato sauce and 1/3 mozzarella. Repeat 2 more layers of this. Bake until cheese is melted and sauce is bubbling, approx. 10 more minutes.
