Banana Spiced Graham Bread

Even if you are not a fan of banana bread, you will enjoy this one. This is a dense delicious bread which is great anytime of the day. The bananas add a sweetness and moistness to the bread but are not the dominate flavor.You'll find all the flavors blend and balance each other. The graham crackers add a very nice twist to the flavor of the bananas. Serve it for breakfast or as desert - warmed or toasted with whipped cream or ice cream. It makes a great home-made gift for friends and neighbors as well.

Ingredients:
  • 1/3 c. shortening or butter
  • 1.2 c brown sugar
  • 2 eggs
  • 1 1/2 c graham cracker crumbs
  • 3 ripe bananas (the riper the better)
  • 1/1/2 c AP flour (whole wheat can be used too)
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp each cinnamon and nutmeg
  • 1/2 tsp each cloves, ginger and allspice
  • 1/4 c milk

Instructions:

 Preheat oven to 350°

Grease 2 large loaf pans and line with parchment paper then grease parchment paper too.    

Mix the butter, sugar, eggs, graham cracker crumbs, and bananas in an electric mixer on low until well combined.   

Sift the remaining dry ingredients together. Slowly add this to the banana mixture.     

Add the milk slowly and combine well. Be sure to scrape down sides when combining.

Bake at 350° covered with foil for 25 minutes. Uncover and continue to cook for another 40 - 45 minutes.

Pick should come out clean.

Allow to cool enough to handle but still warm before removing from pan.
