Slice the onion as thin as possible. Heat the butter in a medium pot and saute the onion until translucent.
Add the chicken broth and curry powder, bring to a boil. Add the peas and return to boil. Stir in the couscous.
Turn off the heat, cover, and let sit 10 minutes. Fluff with a fork and at the last second add the mint, salt and pepper to taste.
