Toast the bread and coat one side of one piece with some mayo.
Get a small non-stick skillet medium hot and add the butter. As soon as the butter is done foaming crush the thyme in your fingers and add.
After a minute add both eggs and immediately salt and pepper. Wait until whites begin to set and shake the pan to free the eggs. Flip over and cover with the cheese. Push the cheese down to help it melt.
Place the eggs on the bread and enjoy.
I like my eggs a little runny, so it only takes about 4 minutes to cook them this way.

My mom used to make these for us as kids, but she would skip the tyme and use a spoon of spaghetti sauce on them. Now I make them for my daughter. Yum!
Kind of makes me want one now!!!
