A hearty bean and meat soup my father used to make. Kind of like a chili without all the chili powder or tomatoes. You'll like it.

Cook Time: 1.5 Hours
Course: Soups/Stews

Ingredients:
  • 2 Cloves Garlic - Minced
  • 1 Sweet Onion - Sliced Thin
  • 3/4 LB Ground Beef
  • 2 Hot Italian Sausages
  • 1/2 LB Bacon
  • 4 Cans of Beans - different kinds
  • 16 oz Chicken Broth
  • 3 Tbsp Ketchup
  • 3 Tbsp Spicy Mustard
  • 1 Tbsp Cumin
  • 2 Tbsp Brown Sugar
  • Salt

Instructions:

Set your oven to 275 Fahrenheit

Heat up a big soup pot or dutch oven... make sure it is oven proof.  Cut the bacon into strips and cook, stirring often, until fat mostly renders and bacon just starts to brown.

Slice the sausages thinly and add.  Add the ground beef.

Once the ground beef is browned, add the onion, garlic, cumin and a pinch of salt.  Turn down the heat if the meat is still browning.  Cook until onion is soft.  Break up the beef with your spoon.

Add the beans!  I like to use navy, black eyed peas, chick peas, black beans.  Pour in the chicken broth, ketchup, mustard, brown sugar and stir to combine.  Really scrape up the bottom of the pot to get the good stuff.

Throw it in the oven for an hour or longer.  Taste the broth in the middle to see if it needs more salt.
