Great summer dish. Cook everything on the grill to keep cleanup to a minimum

Yield: 4
Prep time: 30 Minutes
Cook Time: 15 Minutes
Course: Side Dishes/Vegetables

Ingredients:
  • 3 Ears Corn
  • 1 Poblano Chil
  • Cherry or Grape Tomatoes
  • Fresh Cilantro - Chopped
  • Scallions - Chopped
  • 3 Tsp Sour Cream
  • Juice from 1 Lemon
  • Dash of Cumin
  • 3 Tbsp Feta Cheese
  • Olive Oil
  • Salt and Pepper

Instructions:

Heat up the grill to medium.

Shuck the corn.  Cut the poblano lengthwise.  Coat corn and poblano with olive oil lightly and throw on the grill.  Watch them... the corn should get slightly charred.  The skin on the poblano will scorch and turn black.  Remove from grill.

Cut a couple handfulls of the tomatoes in half and add to a bowl.  Add the feta, cilantro, scallions, lemon juice, cumin, sour cream.

Once the corn and poblano have cooled down, cut the corn off the cob.  Scrape the blackened skin off the poblano and roughly chop.  Add both to the bowl.  Add a pinch of salt and pepper and stir to combine all ingredients.

Taste.  Need more salt and pepper?  I thought so!
