Melt the butter in a large non-stick skillet over medium high heat until just starting to brown.
Throw in the onion and cook until just starting to turn clear.
Add the tomatoes and cook until softened.
Beat the eggs with the milk and add to the skillet carefully. Try to coat the vegetables without moving them. DO NOT TOUCH OR MIX.
Turn on the broiler.
Salt and pepper over the entire mess, then top evenly with the shredded cheddar.
Once the egg starts to set but is still wobbly on top, throw it in the broiler for about 3 minutes. Take out when top is just starting to brown.
Shake gently to remove from pan and slide onto cutting board. Cut into any shape that makes you giggle.
I like to serve this with salsa and sour cream.
