Couldn't be simpler. Healthy, hearty, satisfying. The picture is crazy because I used a purple sweet potato. You never know what you will find at Whole Foods.

Ingredients:
- 1 Sweet Potato
- 1 Baking Potato
- 3 Carrots
- 2 Tbsp Butter
- 2 Tbsp Parmesan Cheese
- Salt and Pepper
Instructions:
Set a pot of water to boil. Cut the veggies into roughly 2 inch pieces. Throw them in the pot.
Boil the veggies until tender, 30 minutes or so.
Drain the pot and mash with butter, cheese, and a pinch of salt and pepper.
