Asian Cucumber Salad

Simple quick pickle. Great with salmon.

Ingredients:
  • 1 Large Cucumber
  • 2 Carrots
  • 1 Tbsp Red Pepper Flakes
  • 1 Tbsp Brown Sugar
  • 1/4 Cup Rice Wine Vinegar
  • Dash or two of Chili Oil (Optional)
  • Dash or two of Sesame Oil (Optional)
  • 1/4 Cup Peanut Oil
  • Tsp Five Spice
  • Salt and Pepper

Instructions:
Cut the cucumber into very thin slices.  No need to cut off the skin.
Make strips out of the carrots using a vegetable peeler.

In a small bowl whisk together all the remaining ingredients.  Taste and add more salt and pepper if needed.

Throw the veggies in a bowl and add the dressing.  Let them sit at least 30 minutes to pickle.
