Ceal's Onion Rings

If you ever get a chance to visit Ceal's on the coast just north of the New Hampshire and Massachusetts border, DO IT! Everything is amazing. This is an attempt to reproduce her iconic onion rings. They are close but not quite perfect.

Cook Time: Under 15 Minutes
Course: Side Dishes/Vegetables

Ingredients:
  • 2 Vidalia or Sweet Onions
  • 1 Beer
  • AP Flour
  • Kosher Salt
  • Fresh ground Pepper
  • Paprika
  • Vegetable Oil or Peanut Oil for frying

Instructions:

Set a big heavy pot over high heat and add 3 - 4 inches of oil.  Use a thermometer to get to a target temperature of 375F.

While that is heating up, cut the onions into thin slices.  You want to cut parallel to the ends so you get rings!

Throw the beer in a bowl and add a big pinch of salt, pepper, and paprika.  Add flour a little bit at a time to get a very runny batter.  It should coat the back of a spoon with some dripping off.

Separate your onion slices into rings and throw in the batter.

Fry in batche, salt each batch as they come out.  Monitor the oil to make sure it hovers around 375F.
