Preheat oven to 375 F.
Peel the sweet potatoes and cut into 1 inch cubes.
Toss in a bowl and douse with olive oil. There should just be enough oil to cover the potatoes, without having much excess at the bottom of the bowl. Shake the bowl around to cover all pieces.
Season liberally with salt, pepper, cayenne, and rosemary. Shake bowl around again to evenly distribute.
Pour out onto a sheet pan and make sure none of the potatoes are touching. Roast for 30-40 minutes, or until potatoes just start to turn brown.
