Preheat your oven to 350 F.
Start a skillet over medium high heat and cook the bacon in a little olive oil. Once the fat starts to render add the onion, shallot, and garlic. Lower the heat and add a little salt and pepper.
Don't let the garlic burn. Stir often.
Meanwhile in a large bowl whisk together egg, 1 Tbsp ketchup, 1 Tbsp mustard, 1 Tbsp worchestershire, and parmesan cheese. Add a little salt and pepper and then whisk in the bread crumbs.
Once the onion mixture is cooked down, add it to the wet ingredients along with the meats. You might have to get your hands dirty with this one.
Grab a rimmed baking sheet and grease it up with a little olive oil. Form the meat mixture into a loaf shape. Try to make it tall!
Mix together the remaining ketchup, mustard, and worchestorshire with some sugar and cover the top of your loaf with this glaze.
Place in the oven and bake for 45 minutes.
