Upscale Meatloaf
Rating : Not Rated

This is the first meatloaf my wife will eat. She doesn't like meatloaf. I think it is quite tasty.

Yield: 4
Prep time: 30 Minutes
Cook Time: 45 Minutes
Course: Main Dishes

  • 1/2 Sweet Onion Diced
  • 1 Slice Bacon Diced
  • 1 Shallot Minced
  • 2 Cloves Garlic Minced/Grated
  • 1 Tbsp Olive Oil
  • 1/3 Cup Unseasoned Bread Crumbs
  • 1 Egg
  • 2 Tbsp Ketchup Divided
  • 2 Tbsp Dijon Mustard Divided
  • 2 Tbsp Worchestershire Sauce Divided
  • 1/2 Cup Shredded Parmesan Cheese
  • Salt and Pepper
  • 1/2 Pound Ground Sirloin
  • 1/2 Pound Ground Veal
  • 1 Tsp Sugar

Preheat your oven to 350 F.

Start a skillet over medium high heat and cook the bacon in a little olive oil.  Once the fat starts to render add the onion, shallot, and garlic.  Lower the heat and add a little salt and pepper.

Don't let the garlic burn.  Stir often.

Meanwhile in a large bowl whisk together egg, 1 Tbsp ketchup, 1 Tbsp mustard, 1 Tbsp worchestershire, and parmesan cheese.  Add a little salt and pepper and then whisk in the bread crumbs.

Once the onion mixture is cooked down, add it to the wet ingredients along with the meats.  You might have to get your hands dirty with this one.

Grab a rimmed baking sheet and grease it up with a little olive oil.  Form the meat mixture into a loaf shape.  Try to make it tall!

Mix together the remaining ketchup, mustard, and worchestorshire with some sugar and cover the top of your loaf with this glaze.

Place in the oven and bake for 45 minutes.
