Low-Fat Mediterannean Quesadillas

  • whole wheat flour tortilla
  • chopped onion
  • chopped red and green bell pepper
  • garlic
  • diced roma tomatoes
  • fat-free cream cheese
  • low-fat sundried tomato and basil feta cheese
  • sliced baby portabella mushrooms
  • baby spinach leaves

Saute all the veggies and garlic in a pan until just slightly soft. Spread the cream cheese on the tortilla, then heat in a pan until the tortilla is just golden brown on the underside.  Add the feta cheese and the cooked veggies and let heat through for about one minute.  Fold the tortilla over in half, cut into slices, and serve with fresh salsa or pico de gallo and sour cream.
