One pan, really easy, and great for that night when you say, "Oh hey, why don't I just cook dinner?" And then you remember that you don't really know how to cook. Here's the fix!

  • 3 medium boneless, skinless chicken breast halves, cut into 3/4 in. pieces
  • 2 cloves garlic, minced
  • 2 tbsp. olive oil
  • 4 Roma tomatoes, chopped
  • 1 14-oz. can artichoke hearts, drained and quartered
  • 1 2 1/4 oz. xan sliced pitted ripe olives, drained
  • 1/2 tsp. dried Italian seasoning, crushed
  • 1/4 tsp. freshly ground black pepper
  • 2 cups romaine lettuce or hearty mesclun, chopped
  • 1 cup crumbled feta cheese
  • 1/2 c. fresh basil leaves, shredded or torn
  • Crusty Italian or French bread, sliced

In a large skillet cook and stir chicken and garlic in hot oil over medium-high heat until chicken is browned. Stir in tomatoes, artichokes, olives, seasoning, and pepper. Bring to boiling; reduce heat. Simmer, covered, for 10 minutes or until chicken is no longer pink. Top with lettuce and cheese. Cook, covered, for 1 to 2 minutes more or until lettuce starts to wilt. Sprinkle with basil and serve on or with bread.
