Mexican chicken

Ingredients:
  • 1 cooked chicken cut up
  • 4 tablespoons butter
  • 1 cup chopped onion
  • 3 tablespoons flour
  • 2 cups milk
  • 1 cup chicken broth
  • 1 1/2 (4 ounce) cans chopped green chilies, drained
  • 1 1/2 teaspoon salt
  • 6 tortillas, cut or toron into bite-size pieces
  • 1 pound shredded cheddar cheese

Instructions:

Melt butter; add onwion and saute until limp.  Add flour and cook for 1 minute.  Pour in milk and chicken broth; cook until thickened, stirring constantly.  Add green chilies and 1 1/2 teaspoons salt.  In a greased 3 quart casserole, put layers of chicken, tortillas, sauce and cheese.  Repeat untill all are used, ending with cheese on top.  Bake at 375 for 1 hour or until hot through.  Serve with salsa.
