Squash Souffle

Best squash souffle with cheese.

Ingredients:
  • 4 medium yellow squash, sliced
  • 1 medium onion, chopped
  • 4 tablespoons melted butter
  • 2 eggs
  • 10-12 crackers, crushed
  • 1 cup grated cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic

Instructions:
Steam onion and squash together until tender.  Drain excess water and mash well.  Add curshed crackers, salt, pepper, garlic, butter, eggs (beaten), and cheese.  Blend well.  Pour into greased baking dish and bake at 350 ab out 45 minutes until set and slightly brown.
