Rinse 1 chicken and put in large pot. Add the 12 cups of water or more if you are making a large amount. Add remaining ingredients except for rice. Bring to a boil and simmer for 45 minutes on medium to medium low heat.
Debone chicken and set aside.
Bring soup to a rapid boil and add uncooked rice. Cook for 20 minutes.
Add chicken and simmer for 10-15 minutes.
Serve with saltine crackers.
Variation: Make soup without rice. Make biscuits with Bisquick or canned biscuits. Drop dough by teaspoon into boiling soup (or cut rolled biscuits into strips). Cover and cook for 10-15 minutes for Chicken and Dumplings,
