black eyed peas dish

Ingredients:
- 1 15-oz. can black-eyed peas, rinsed and drained
- 1/4 cup thinly sliced green onions (2)
- 1/3 cup finely chopped red sweet pepper
- 2 cloves of garlic, minced
- 2 tbsp cooking oil
- 4 tbsp cider vinegar
- 1 to 2 fresh jalapeno peppers, seeded & chopped
- 1 Tbsp chopped fresh cilantro
- 1/2 tsp cracked black pepper
- dash of salt
Instructions:
In a bowl combine all ingredients. Cover and chill overnight. Serve with crackers or tortilla chips or even eat as a side dish.
Chill for up to 4 days. Makes 2 cups.
