black eyed peas dish

Ingredients:
  • 1 15-oz. can black-eyed peas, rinsed and drained
  • 1/4 cup thinly sliced green onions (2)
  • 1/3 cup finely chopped red sweet pepper
  • 2 cloves of garlic, minced
  • 2 tbsp cooking oil
  • 4 tbsp cider vinegar
  • 1 to 2 fresh jalapeno peppers, seeded & chopped
  • 1 Tbsp chopped fresh cilantro
  • 1/2 tsp cracked black pepper
  • dash of salt

Instructions:

In a bowl combine all ingredients.  Cover and chill overnight.  Serve with crackers or tortilla chips or even eat as a side dish. 

Chill for up to 4 days.  Makes 2 cups.
