Ingredients:
- 1 Leek, chopped
- 1/2 onion, chopped
- 2 stalks celery, chopped
- 2 cloves of garlic, minced
- 2 green zucchini's, sliced
- 4 carrots (sliced)
- 1 can chopped tomato (w/ basil and oregano)
- 1 small can tomato paste
- 2 quarts low-fat chicken broth
- 1/2 head of cabbage, chopped
- 3 tbsp. fresh basil, chopped
- 3 tbsp, fresh oregano, chopped
- 3 tbsp. fresh thyme, chopped
- 1/4 tsp olive oil
Instructions:
Sauté garlic, onion and celery in olive oil. Once sautéed, add broth. Next add all other ingredients. Bring to a boil. Turn heat down to low and cook for 1 hour.
