Weight Watchers zero point soup

Ingredients:
  • 1 Leek, chopped
  • 1/2 onion, chopped
  • 2 stalks celery, chopped
  • 2 cloves of garlic, minced
  • 2 green zucchini's, sliced
  • 4 carrots (sliced)
  • 1 can chopped tomato (w/ basil and oregano)
  • 1 small can tomato paste
  • 2 quarts low-fat chicken broth
  • 1/2 head of cabbage, chopped
  • 3 tbsp. fresh basil, chopped
  • 3 tbsp, fresh oregano, chopped
  • 3 tbsp. fresh thyme, chopped
  • 1/4 tsp olive oil

Instructions:
Sauté garlic, onion and celery in olive oil. Once sautéed, add broth. Next add all other ingredients. Bring to a boil. Turn heat down to low and cook for 1 hour.

(You can add any other vegetables to this soup to make it unique)
