Meat Loaf with BBQ Sauce

Kind of retro, but since it has BBQ sauce it's a different taste than most meatloaf. Goes great with baked or mashed potatoes and salad. This also freezes, and it's a nice dish when you feel like baking instead of standing over a stove. Also, easy for toddlers to eat.

Maple Nut Pork Chops

This is an easy recipe, and also great for ski trips or cabin trips, etc. I freeze it ahead of time, and all you have to do is thaw and bake. Thanks again to Chrissy G. who sent this to me back in '03. I do it occasionally for dinner, and every year on ski trips, snow trips, or anytime I have to cook for extended family away from home but don't want to clean up a big mess.

Italian Tortellini Soup

This soup was originally sent to me about five years ago, by my good friend Chrissy G. It saw me through all three pregnancies--by the third one I made six or eight batches ahead of time and froze them. It was one of my staple go-to dishes when I wasn't feeling good, and my family always liked it. It's great as a main dish or a side. I usually serve half the recipe and freeze the other half.
