Maple Nut Pork Chops

This is an easy recipe, and also great for ski trips or cabin trips, etc. I freeze it ahead of time, and all you have to do is thaw and bake. Thanks again to Chrissy G. who sent this to me back in '03. I do it occasionally for dinner, and every year on ski trips, snow trips, or anytime I have to cook for extended family away from home but don't want to clean up a big mess.

Ingredients:
  • 4 boneless Pork Chops
  • 2 TBS. Maple syrup
  • 1 TBS. Brown sugar
  • 1/4 tsp. Thyme
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 cup macadamia nuts

Instructions:

Mix above ingredients together and baste on both sides of pork chops. (I put everything in a ziploc bag to mix, so there's no mess.) Take 1/2 cup of chopped macadamia nuts and press on top of pork chops.  Bake at 400 degrees for 25-30 minutes (or less).  (Tip: use non-stick spray on tinfoil over a cookie sheet and it make clean-up super easy.) Serve with mashed potatoes, squash or zucchini. 

 To use for a make-ahead item: Freeze the pork chops in the ziploc with the ingredients (minus nuts), and then thaw before baking.
