Kind of retro, but since it has BBQ sauce it's a different taste than most meatloaf. Goes great with baked or mashed potatoes and salad. This also freezes, and it's a nice dish when you feel like baking instead of standing over a stove. Also, easy for toddlers to eat.

Ingredients:
- 1 lb. lean ground beef (15% fat)
- 1 1/2 cups of fresh bread crumbs (or pre-made)
- 1 cup of onion, chopped
- 2 large eggs
- 1/3 cup of fresh chopped parsley
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 1 1/4 cups of bottled BBQ sauce
Instructions:
Preheat oven to 350 degrees. Combine first 7 ingredients in bowl. Add 3/4 cup BBQ sauce; mix until just blended. Pack mixture into 8 1/2 by 4 1/2 metal loaf pan. Spread remaining 1/2 cup of sauce over top. Bake meat loaf until top feels firm and thermometer inserted registers 160 degrees or about 1 hour 10 minutes. Let stand 15 minutes. Slice and serve. (For super easy clean-up, I use disposable aluminum baking pans.)
