This is a family Christmas tradition. I get up early Christmas morning to make it and we eat it as we open gifts.
One daughter's friend stayed overnight at our house the night before she got married. I thought she should have something special for breakfast on her wedding morning so I made this coffee cake even though it was April. When each of my daughers came downstairs that morning they said, "Is it Christmas?"
Yield: 6
Prep time: 30 Minutes
Cook Time: 45 Minutes
Course: Breakfast/Brunch
Ingredients:
- 1 1/4 c sugar, divided
- 2 T cinnamon
- 1 1/2 c sifted flour
- 1 1/2 t baking powder
- 1/2 t salt
- 1/2 c butter, plus extra for "dotting"
- 1 egg
- 1/2 c milk
Instructions:
Mix 3/4 c sugar with the cinnamon. Set aside.
Combine flour, baking powder and salt in a small bowl. In a larger bowl, cream together 1/2 c of butter and 1/2 c sugar. Beat in the egg. Add the flour-baking powder-salt mixture, alternating with the milk. Spread in a buttered 9x9 inch pan and sprinkle with the reserved cinnamon mixture. (I poke holes in the batter with a chopstick and shake some of the cinnamon mixture into the holes.) "Dot butter lavishly" over the top, and bake at 350 for 45 minutes or until brown and crusty.
