Yummy use for apple butter

Ingredients:
- One 2 pound boneless pork loin roast
- 1 1/2 cups apple butter
- 1 teaspoon cayenne pepper
- 1 cup long-grain rice
- 1 1/2 cups unsweetened coconut milk
Instructions:
- Preheat oven to 350F.
- Season the pork with salt.
- In a large ovenproof skillet, heat 1 tablespoon olive oil over medium-high heat, then brown the pork.
- In a small bowl, combine the apple butter and cayenne pepper; slather the mixture onto the pork. Roast until a thermometer inserted into the center registers 145F, about 45 mins.
- Meanwhile, in a medium saucepan, bring the rice, coconut milk, 1/4 cup water and 1/2 teaspoon salt to a boil. Cover and cook ove rlow heat for 25 minutes.
- Fluff the rice and serve with the pork.
