TO go with the Espresso-Rubbed Steak or whatever else you think it will pair nicely with!

Ingredients:
  • 2 medium, fresh Anaheim or ponlano chile peppers
  • 1/2 cup fresh cilantro
  • 1/4 cup crumbled Cotija cheese
  • 2 tbsp. pine nuts
  • 2 cloves garlic
  • 1/2 tsp. crushed red green pepper
  • 1/3 cup olive oil
  • salt (to taste)
  • pepper (to taste)

Instructions:
  • Halve the peppers lengthwise; remove stems, seeds and veins. Coarsely chop the peppers.
  • In a food processor combine peppers, cilantro, Cotija cheese, pine nuts, garlic, red pepper, salt and pepper. Process to finely chop mixture.
  • With processor running, add the olive oil in a steady stream through feed tube to combine into a coarse paste.
  • Serve with Espresso-Rubbed Steak.
