Ingredients:
- 2 medium, fresh Anaheim or ponlano chile peppers
- 1/2 cup fresh cilantro
- 1/4 cup crumbled Cotija cheese
- 2 tbsp. pine nuts
- 2 cloves garlic
- 1/2 tsp. crushed red green pepper
- 1/3 cup olive oil
- salt (to taste)
- pepper (to taste)
Instructions:
- Halve the peppers lengthwise; remove stems, seeds and veins. Coarsely chop the peppers.
- In a food processor combine peppers, cilantro, Cotija cheese, pine nuts, garlic, red pepper, salt and pepper. Process to finely chop mixture.
- With processor running, add the olive oil in a steady stream through feed tube to combine into a coarse paste.
- Serve with Espresso-Rubbed Steak.
