Deceptively Healthy Loaded Potato Soup

Even my husband loves it and he grew up with a much less healthier version.

  • 1 package Simply Potatoes diced potatoes with onions
  • 1 packet Betty Crocker Cheddar Garlic Mashed Potatoes
  • 1/4 cup chives, minced
  • 2 cans (14.5 oz) vegetable broth, low sodium
  • 6 strips turkey bacon
  • 1/2 cup onion, diced
  • 1/2 cup sliced carrots
  • 1/2 stalk celery, chopped
  • 1- 8 oz. container fat free sour cream
  • 1 1/2 cups skim milk
  • 1 1/2 tbsp minced garlic
  • 1/2 cup parmesan cheese
  • freshly ground sea salt & black pepper, to taste
  • 1/2 tsp red pepper flakes
  • extra virgin olive oil, for sauteeing
  • shredded cheddar cheese for garnishing
  • light cooking spray


Preheat oven to 350 degrees.  Spray baking pan with cooking spray.  Lay out strips of turkey bacon on pan.  Set aside.

Coat bottom of soup pot with extra virgin olive oil.  Add carrots, celery, onion.  Saute until vegetales are tender.  Add garlic, sautee additional 3 minutes.  Add vegetable broth and entire package of Simply Potatoes diced potatoes with onions.  Add red pepper flakes.  Add salt and pepper, to taste.  Bring to boil then simmer for 15 minutes.

Place turkey bacon in oven and bake for 15 minutes while soup simmers.   When bacon is crispy, remove from oven and chop into bite sized pieces.

Add bacon, milk, parmesan cheese and sour cream to soup.  Bring soup back to boil, remove from heat.

Add minced chives and packet of Betty Crocker Cheddar Garlic Mashed Potatoes. Stir until thoroughly mixed through.

Top with shredded cheddar cheese to your liking and enjoy!
