  • lasagna noodles
  • 14 oz. can diced tomatoes, do not drain!
  • small onion
  • 2 garlic cloves
  • 1 teaspoon red pepper flakes
  • 2 tablespoons pine nuts (walnuts can be substituted)
  • 1/4 cup parmesan cheese
  • 1 12 oz container cottage cheese
  • 8 oz container basil pesto (or make yours homemade like I do!)
  • 2 cups mozzarella cheese
  • salt and pepper, to taste
  • 1 8 oz. package frozen spinach, defrosted and rung out


Par-boil lasagna noodles, set aside.  Preheat oven to 350 degrees.  Saute garlic and onion until translucient, place in large in mixing bowl.  Add cottage cheese, parmesan cheese, pesto, pine nuts, red pepper flakes, salt, pepper and spinach in mixing bowl. 

Gently fold ingredients together.  In lasagna pan, place liquid from diced tomato can on bottom in order to avoid sticking.  Place lasagna noodles on top of tomato liquid.  Spread the pesto cheese mixture on top of lasagna noodles followed by diced tomatoes then mozzarella cheese.  Repeat this process for as many layers as necessary. 

I like to put thinly sliced tomato wheels on the top layer, topped off with parmesan cheese. 

Bake at 350 degrees approximately 30 to 45 minutes depending on your oven.  Serve with garlic bread, salad and enjoy!
