Ingredients:
  • 1 box whole wheat pasta
  • broccoli
  • 1 lg carrot, grated
  • 1 green bell pepper
  • 1 onion, chopped
  • 4 cloves garlic
  • 15 oz crushed basil tomato sauce
  • 1 tbsp + 1/4 cup chicken stock
  • 1/2 of lemon freshly squeezed juice
  • 1 3.5 oz container reduced fat feta
  • extra virgin olive oil
  • zucchini
  • 1/4 cup toasted pine nuts
  • 1/4 cup parmesan cheese
  • salt & pepper, oregano, fresh basil, parsley, red pepper flakes

Instructions:
Saute chopped vegetables in extra virgin olive oil.  Add seasoning.  Bake pine nuts loosley tossed in olive oil for approximately 10 minutes.  Meanwhile, boil water, cook pasta.  Add tomato sauce and chicken stock to vegetables.  Add 1/4 cup water from pasta once cooked.  Add pasta, add fresh basil, lemon juce, feta, pine nuts and parmesan cheese.  Stir and serve!
