Vegetable Chowder

Ingredients:
  • 4 carrots; chopped
  • 2 onions; chopped
  • 2 tablespoon Butter
  • 4 cups chicken broth
  • 4 cups chicken broth
  • 1/2 teaspoon dried thyme leaves
  • 1/2 teaspoon sage
  • 3 yukon gold potatoes; diced
  • 5 cups corn
  • 2 cups half and half
  • 4 tablespoon cornstarch
  • 4 tablespoon water
  • 1 1/2 teaspoon Salt

Instructions:

Saute carrots and onions in butter.

Add chicken broth, thyme, and sage.

Bring to a boil.

Add Potatoes, corn, and half-and-half.

Reduce heat to medium and simmer for 15 minutes, until veggies are tender.

Mix cornstarch and water in until smooth.

Add salt. Garnish with chives if desired.
