French Coffe Cake

Traditional coffe cake with cinnamon, nut topping.

Course: Breakfast/Brunch

Ingredients:
  • ¼ lb. butter
  • 1 C sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1 C sour cream
  • 2 C flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • ¼ C sugar
  • ½ to ¾ C chopped nuts (pecans, walnuts, etc)

Instructions:

Preheat oven to 350


Batter
Cream together the butter, sugar. Add eggs, and vanilla and mix til combined. For firm cake, cream till smooth. For fluffier cake, cream till the batter turns a paler shade. Add the sour cream, flour, baking soda, and baking powder and mix until just blended.

Topping
Prepare the chopped nuts mixture. In a food processor: put the sugar, cinnamon, and nuts all in together and pulse till well mixed and coarsely chopped.


Pour ½ the batter into a greased ring pan. Sprinkle 2/3 of the nut mixture over the batter. Add the rest of the batter evenly, and then the rest of the nuts. Pat the nuts down.


Bake at 350 for 45 minutes.

In some pans this results in a rather thin cake. I often double the batter.
