3 Lbs. Ground Chuck
1 Large Onion, Chopped
2 Medium Green Bell Peppers
3 2” Jalapeno Peppers
1 Teaspoon Salt
1 Teaspoon Pepper
1 Teaspoon Crushed Red Pepper
2 Tablespoons Chili Powder
1 Teaspoon Paprika
2 16 Oz. Cans Stewed Tomatoes
2 16 Oz. Cans Kidney Beans -- Drained
1 Cup Water
1 Bayleaf
In Large skillet, brown ground beef with the onions, salt and pepper: Drain excess fat. Place the ground beef in a large pot on medium heat and add the chili powder, paprika and ½ cup of water. Add the tomatoes, green peppers, jalapeno peppers and bayleaf, then stir. Finally, add the kidney beans and ½ cup of water. Bring to a slow boil stirring often. Then reduce to simmer for one (1) hour. Add water as needed. Yields 8 servings.
