Ingredients:
- 10 to 20 dried chillies, washed and tickly sliced.
- 1 inch ginger, sliced. 1 onion, sliced.
- 2 stalk green onion, cut into 1 cm lengthwise, separaate the white part and the green leaves.
- (A) Mixed together: 2 tablespoons dark soysauce, 2 table spoons light soysauce, 2 tablespoons oyster sauce, 2 tablespoons sesame oil,
- 1 tablespoon sugar, 1 tablespoon black vinegar
- (B) cornstarch and water, mixed.
- half chicken breast whithout skin, marinate with dark soysauce.
Instructions:
First, saute ginger, onion and white part of spring onion till fragrant. Put in the dried chilli. Stir fry for another 2 minutes. Stir in the chicken pieces, stir fry until the chicken changes colour. Pour in the (A) mixture, stir fry for another one minute, stir in (B) mixture, put in the green part of the spring onion. Viola, serve with hot rice or noodles.
