So fresh! So full of flavor! This is a favorite from my mom's family in the Rio Grande Valley way down in south TX near the mexican border. The salad is not too hot so it suits almost anyone's taste. Be ready for rave reviews when you bring this to a dinner party. This one always gets attention!

Sarita's Savory Stew

Lots of S's in that description! I just whipped up this stew after my husband and I got back from vacation, thinking I had nothing in the fridge! He wanted something hearty and light on the carbs. Low and behold, there were just enough raw ingredients in my possession to make this stew. So since this stew comes from the urge to be resourceful, I encourage you to also experiment and not stick to the ingredients I list!

Super easy and very fun. Best to eat it fresh out of the fryer! Found it here: http://www.starchefs.com/features/indian_spotlight/2005/html/crispy_okura_s_saran.shtml This was the first time i deep fried anything! Of course that makes it fun and ok for a party, but maybe not so good for most days. For next time: I might try brushing it w/ oil and sticking it under the broiler or baking. Also, I am going to soak the red onions in lemon juice or vinegar for a while. I think this will bring out the sweetness, and cut the strong "onioniness" and it will all blend a bit nicer.

Pear crostini

Holy cow this was good. and very easy. Found it here: http://www.kirotv.com/food/3672060/detail.html I only used one slice of pear per crostini, and that was plenty. To make the crostini, i used 2 french bread baguettes and cut them into 1/4" slices. brushed each side w/ olive oil, and baked each side for 2 minutes in a 400 degree oven.

This is a really yummy wholesome dish to compliment any Indian meal. I like to make this in bulk and eat it over the course of the week! This is definitely one of my husband's favorite hearty beans, along with kidney beans and lima beans!
