WalNutty Banana Bread

I was already baking a quiche and figured I may as well make full use of the oven, so I looked around and had three ripe bananas--which was my sign that I had to make some banana bread. The recipe is pretty simple and adapted from something else I found online. I am not an accomplished baker, but this recipe helps make me look like one!

Easy Enchilada Sauce

After many years of picking up the canned version, I decided to venture out to my local latino market and get the ingredients to make my own Enchilada sauce. Mind you, none of the cashiers at the store really knew how to make it, except for one who gave me a vague recipe in broken English. So I went home, and improvised...and it was pretty solid!

Alison's Corn Pudding

Chipotle Beef Marinade

A great marinade for beef. I like to leave beef tenderloin in this marinade at least 8 hours. The key is the chipotle peppers. Smokey and spicy. Look for the chipotle peppers in adobo sauce in your mexican food isle.
