Home-made chicken nuggets

A great alternative to greasy, unhealthy shop bought/fast food restaurant versions.

Ingredients:
  • 125g Nature's Path Organic Mesa Sunrise multigrain flakes or any multigrain cereal/cornflakes
  • 4 tablespoons plain flour
  • 2 eggs, beaten
  • 400g chicken breast, cut into chunks

Instructions:

Preheat the oven to 200 degrees centigrade.  Put the cornflakes in a plastic bag and using a rolling pin, crush the flakes into small crumbs.

Tip the flour, beaten egg and crushed flakes into 3 separate bowls.  Dip each chicken chunk in to the flour, then the egg and finally the crushed flakes.

Place the coated chicken on a baking tray lined with parchment and cook for 20-25 minutes, turning once, until the coating is lightly golden all over and the chicken is cooked thoroughly. 

Best served with new potatoes or home made wedges and peas.
