This yummy lemon pickle I made with my mother in law while waiting for daughter to be born. She was 12 days late, so we figured...might as well pickle!! Lemon pickle was one of the pickles we made in addition to turmeric root/ginger pickle, and chile pickle.

Ingredients:
  • Fresh Lemons (with thick rinds)
  • Salt
  • Cayenne Pepper
  • Fenugreek Powder
  • Mustard Powder (Kuria)
  • Turmeric
  • Asofetida
  • Sugar
  • Canola Oil

Instructions:

Wash and dry 12 lemons, and chop into small half inch pieces.

Set aside a mix of 1/2 cup of coarse mustard powder, 1/4 cup of salt, 1/4 cup of cayenne pepper, 2 tsp. of fenugreek powder, 2 tsp. of turmeric.  After this powder is mixed together, put in the lemons and stir it all up.

Set this aside overnight.

The next day, add 1/4 cup of white sugar to the mixture. 

Heat up 1/4 cup of oil, turn off the stove and add 1 tsp of mustard seeds, and 1/2 a tsp. of hing. Let it cool down completely, and then add to the mixture of lemons.  Mix evertything and put in glass jars and set in the sun.

Let marinate for 1 month.
