Erica's feather sponge cake

This is the sponge cake recipe my mother always used, and it is one of my favourites!

Prep time: 15 Minutes
Cook Time: 30 Minutes
Course: Cakes/Frostings

Ingredients:
  • 4 large eggs
  • 1 rounded tblsp baking powder
  • 3/4 cup caster sugar
  • 1 tblsp boiling water
  • 1 cup custard powder, or cornflour or half half (tasted better with CP)

Instructions:

Beat eggs and sugar until peaky (10 mins-ish)

Stir in double sifted custard powder/CF and baking powder

Add/mix in water at the VERY END

 

Bake 18-20 mins 160C (325 F) in two small round tins, greased and floured beforehand

 

Do not open oven whilst cooking.

place the cakes one on top of the other with Jam and fresh whipped cream (not from a can) in the middle and more whipped cream on top (with fresh strawberries or grated chocolate)
