Ingredients:
  • 1 stick (or 125g)plus 2 tablespoons butter, at room temperature
  • 1-1/2 cups sugar
  • 2 cups all purpose (plain) flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup Irish Breakfast Tea (or Assam) steeped with 2 teaspoons of leaves, cooled to room temperature
  • 1 teaspoon vanilla extract
  • 4 large egg whites

Instructions:
1. Preheat oven to 350 degrees
2. Beat butter with a mixer on high speed.
3. Add in sugar and beat until it’s light and fluffy, about 3 minutes
4. Stir together flour, baking powder, and salt
5. Mix the cooled Irish Breakfast tea and vanilla
6. Add the flour mixture to the sugar mixture alternately with the tea mixture, beginning and ending with the flour mixture; and beating well after each addition
7. Set aside incorporated mixture
8. In a clean bowl, beat the egg whites until soft peaks form
9. Fold half of the egg whites into cake batter until incorporated, repeat with the second half
10. Scoop batter into cupcake pans with liners
11. Bake for approximately 20 minutes or until a toothpick comes out clean
