The origin of this marinade came from the best supermarket chain in the South (World?), Publix. Then I tweaked it and made it into a force to be reckoned with...Respect!

Cook Time: Under 15 Minutes
Course: Main Dishes

Ingredients:
  • 1 1/2 Ibs of yellowfin tuna
  • Pam Cooking Spray
  • 1/2 cup pineapple juice
  • 1/2 tsp dry mustard
  • 1 clove of garlic, minced
  • 1 tbsp brown sugar
  • 1 tsp ground ginger
  • 3 tbsp soy sauce
  • 2 tbsp sherry wine
  • Sesame seeds
  • Salt & Pepper to taste

Instructions:

1.  Mix marinade ingredients (pineapple juice, mustard, garlic, brown sugar, ginger, soy sauce and sherry) in a glass or ceramic bowl. 

2.  Add cut up slices of tuna steak (bigger chunks for a more rare center) into marinade and marinate for at least 20-30 minutes turning once. 

3. In a large plastic Ziploc bag, place some ginger, some mustard, some black pepper, and some sesame seeds.  When I say "some" I mean, "I have no idea how much I put in."  Let's just say it's a "reasonable" amount.

4.  Then place marinated tuna (in small groups) into plastic bag and shake. 

5.  Lightly spray both sides of tuna steak (now with sesame seeds on them) with Pam. 

6.  Over medium-high heat pan-sear to desired consistency.  I tend to like it rare and only cook it for a minute or so.

Serve with rice or with veggies.
