Smoky Chicken Pizza

Ingredients:
- 1 large red onion, thinly sliced
- 1 large red onion, thinly sliced
- 1/2 tsp. crushed red pepper
- 4 individual-size packaged baked pizza crusts or flat breads
- 4 individual-size packaged baked pizza crusts or flat breads
- 3 oz. smoked mozzarella cheese, shredded
- 1 cup arugula
- *BBQ sauce
Instructions:
1. Preheat oven to 425°F. In a large skillet, cook onion, over medium heat, in 1 tablespoon hot oil for 10 minutes, until softened, stirring occasionally. Set aside.
2. In a small bowl combine remaining 3 tablespoons olive oil and crushed red pepper; drizzle some on the pizza crusts. Place crusts on a very large baking sheet(s). Top with chicken, onions, and cheese.
3. Bake for 10 minutes or until cheese is melted and pizzas are heated through.
4. Top pizzas with greens, drizzle any remaining oil, and sprinkle or pass additional crushed red pepper.
